

How is your cocktail reminiscent of warmer months? How does your cocktail answer the question, "what do spring and summer mean to you?" In spring, plants sprout and flowers blossom. Summer is the warmest time of the year and has the most daylight. A combination of both to me means an explosion of aromas, flavors, colors and more time to enjoy with friends and family. I have been working on fine dinning restaurants for a few years, which gave me the opportunity to see many seasonal products coming in and out of the walk-in. This cocktail is based on seasonal products that bring back the sunshine, offering a taste of vegetables, herbs and fruit that awakens all your senses. When you feel the firsts rays of the sun during spring and summer, you know is going to be a good day. I took my photo using the sunrise light coming through my window to add that feel into the cocktail. On good days when you want to do more and stop less, you want an accessible cocktail, large format and easy to prepare, that refreshes you, quenches your thirst and allows you to be ready in advance. I decide that a lower ABV is a better option to suit more palates and enjoy it for longer.

When you are blessed to be a parent, your sense of time may be a little different than before. You get more responsibilities that you have to accomplish in the same amount of time as always. Creativity is the fun part that motivates me as a Bartender, I learn everything I can and stay up to date with trends to open up my possibilities and make my ideas come true. I might overthink a cocktail and its many variations or approaches, however, when I enter the kitchen I have to be precise and manage my time very well to complete the task. Spring & Summer Walk-in is an easy, quick and lucid cocktail that represents this moment in my life based on my experience and knowledge that combines perfectly with the warmest and most unpretentious days.

Glass: Cognac & Mini Tumbler
Ice: Crushed
Garnish: Rhubarb Peel & Seasonal Sidecar
Method: Carbonated
SPEC
6oz of Carbonated Blend (includes 90ml Le Monè, 90ml Juice & 5ml Syrup)
Fill your glassware with crushed ice 1 finger (mini tumbler) and 2 fingers (cognac) before the edge. Accommodate the herbs, veggie & fruits on the sidecar. Pour the cocktail and garnish with rhubarb.

Cut and arrange to your liking
CARBONATED BLEND
PART 1: Asian Pear & Rhubarb Juice
1/2 Water Cup
50g Chopped Rhubarb
300g Chopped Asian Pear
Blender all the ingredients and strain. Discard pulp. It makes about 300g of juice.
PART 2: Carbonation for 5 serves
1 CO2 Soda Charger
1Lt iSi Whipped Cream
450ml Asian Pear & Rhubarb Juice
450ml Le Moné
25ml Blue Agave Syrup 2:1
Mix ingredient and add into the iSi dispenser
Charge with the CO2
Refrigerate till needed.
Release the pressure before opening the dispenser to pour.
*carbonation can be done with a different technique.
