The Story Behind “Heirloom”
Legacy is not just about what we leave behind—it’s about the moments we create, the traditions we nurture, and the values we pass on. My journey in hospitality has been shaped by craftsmanship, patience, and the pursuit of excellence, much like the legacy of El Dorado Rum. But now, as a father, I see legacy through a different lens—not just in the drinks I create, but in the small, everyday moments with my children.
The inspiration for this cocktail comes from one of those moments—the simple joy of making banana milkshakes for my son. Now, with my second child’s first solid food being banana, this fruit has taken on a new meaning, symbolizing not just one, but both of my children—the next chapter of my legacy.
“Heirloom” bridges past, present, and future. It carries the heritage of El Dorado Rum, a spirit crafted with time-honored techniques. It reflects my journey as a bartender, balancing creativity and refinement through milk clarification. And most importantly, it embodies legacy—childhood memories reimagined into a cocktail, blending nostalgia with sophistication.
A drink that starts playful and tropical, like the innocence of youth, yet finishes with elegance and depth, much like the wisdom gained through fatherhood and a career dedicated to the art of hospitality.

SPEC
1/4oz Crème de Banane (Tempus Fugit)
1/2oz Honey Syrup (2:1)
3/4oz Pineapple Juice
1oz Coconut Milk
2oz Banana-Vanilla Yogurt Mix
2oz 3yr El Dorado Rum
*Prepare your Salty Banana air and set aside.
1.- In a chilled glass, pour 3oz of clarified cocktail
2.- Garnish with Salty Banana Air
CLARIFIED COCKTAIL (5 Serves Batch)
1oz Crème de Banane (Tempus Fugit)
2oz Honey Syrup (2:1)
3oz Pineapple Juice
8oz Banana-Vanilla Yogurt Mix
8oz 3yr El Dorado Rum
200g Water
50g Coconut Milk Powder
1.- Combine all the ingredients except water and coconut milk powder
2.- In a different container combine the water and the coconut milk powder
4.- Pour the cocktail mix in the coconut milk slowly to integrate
5.- Let it settle for 1 hour then coffee filter or superbag (keep it refrigerate it)
6.- Adjust the ABV of the cocktail to 33-35% ABV adding water (1Tbsp water per 1oz Cocktail ish)
7.- Refrigerate at least 30min before serving. Keep it refrigerated.
BANANA VANILLA MIX (Yield 280g)
1/8 Tsp Fresh Grounded Nutmeg
1/8 Tsp Fresh Grounded Cinnamon
50g Water
100g Vanilla Greek Yogurt
206g Ripe Banana
1.- In a blender, light blend all the ingredients
2.- Fine strain to remove extra pulp and seeds
4.- Use it right away
SALTY BANANA AIR
4 Pinch of Kosher Salt
2oz Crème de Banane (Tempus Fugit)
8oz Water
Soy Lecithin (1% per final liquid weight)
Air Pump
1.- In a container (liquid should occupied 1/3 part of the container)
2.- combine all the ingredients and give a quick blend with a handheld milk frother
3.- Add the air pump and turn on
4.- With a julep strainer or spoon collect the bubbles and add it on top of the cocktail
