

In 2022 I was reading the book "Liquid Intelligence" by Dave Arnold and I got inspired by the knowledge on those pages, I wanted to test by myself some of the ideas and techniques. It was summer in the city and I happened to have watermelon rinds in the fridge. I have been playing around trying to utilize and get the most from all the ingredients to find that balance with the sustainability concept, on this cocktail you can see how I used only the rinds of fruit to create a cocktail while the flesh was used for a non-alcoholic watermelon water and snacks.

MISE EN PLACE
Glass: Chilled Collins
Ice: Spear
Garnish: Frozen Watermelon Rose
Method: Clarified
SPEC
3oz Watermelon Clarified Batch***
Top with higly carbonated water
Build on glass: ice / cocktail / water
WATERMELON CORDIAL*
400g Watermelon Rinds
400g Superfine Sugar
Combine ingredients and let steep on fridge 12-24hrs (the longer you leave it the more Watermelon flavor you get).
Stir to combine & NutriBullet the mixture
Strain, bottle & date it.
WATERMELON BATCH** (serves 1)
2 Pinch Salt (Kosher)
1/2oz Fresh Lime Juice
3/4oz Watermelon Cordial*
2oz White Rum (The Real Mc.Coy)
Combine ingredients and stir
WATERMELON CLARIFIED BATCH*** (serves 1)
1oz Whole Milk
Watermelon Batch**
Pour the Watermelon Batch over the milk (no other way around)
Gently stir and strain the mix into a Coffee Filter
Bottle & date it.
Keep refrigerated.
FROZEN WATERMELON ROSE
Peel out the deeper green of the Watermelon rind and peeled it from the side. Check Liquor Intelligence book for pics references.
Roll the strips and leave them on the freezer till you need them.
